It is a journey where passion meets perfection. Our company spans a stunning 172 hectares, nearly all south-facing, with 50 hectares dedicated to our premium organic vineyards.

Hills are structured like an amphitheater, creating an exceptional microclimate perfect for cultivating high-quality grapes. The soil is predominantly clayey with intriguing calcareous veins scattered throughout, while the altitude ranges from 170 to 220 meters above sea level.

Vineyards

The meticulous process of soil management  before planting takes about three years, ensuring the best environment for our young vines. The maintenance of our vineyard consists no herbicides, opting instead for harrowing and green manure to keep our land rich and vibrant. Various herbaceous plants not only enrich the soil but also help manage weeds naturally. With a planting density of 6,250 plants per hectare, we utilize the Guyot and Spurred Cordon training systems to cultivate our vines. Our approach to disease prevention is minimal yet effective, focusing on prudent trimming and maintaining healthy foliage.

Quality is paramount, controlled through careful pruning, strategic shoot thinning, and early summer bunch reduction. Our team closely monitors ripening through chemical, physical, and sensory parameters to ensure we harvest at the perfect moment. Manual vineyard management guarantees each grape meets our rigorous standards.

Why Organic?

We choose organic practices to protect flora, fauna, and consumer health, even if it requires higher costs and more labor. Our vineyards are isolated from other crops and shielded by woodland parcels, prioritizing environmental preservation for future generations to enjoy.

Winery

Our winery is entirely underground, designed to mirror the natural flow of our vineyards. Grapes arrive at the cellar by gravity, undergo two manual selections, and are processed with minimal mechanical intervention. Expert craftsmanship is essential during fermentation and refinement. We handle must and wine without oxygen exposure, avoiding added antioxidants like sulfites, using minimal amounts only during aging and bottling. Winemaking occurs in steel containers, oak vats or oak barrels, reflecting the character of specific plots.

Post-fermentation, wines refine for several months to over a year, depending on the product, enhancing their longevity, structure, and flavor profile. Refinement takes place in both small barrels (225 liters) and large wooden vats (up to 7,500 liters). Aging times vary based on grape variety, vineyard age, and annual climate conditions. Our red wines remain unfiltered, preserving their complexity and authenticity. Our goal is to create unique, recognizable wines that captivate connoisseurs by showcasing the true essence of our terroir.
